Chicken Breasts or 1 whole chicken - cut up (skin removed)
Diced Tomatoes – no salt added
Diced Green Chilies
Vermouth
Olive Oil Spray
Black Pepper
Red Pepper Flakes
Mama Carol’s Poultry Rub (recipe below)
Place chicken pieces on a flat clean surface. Sprinkle with poultry rub and squirt with olive oil Spray (important for browning chicken).
Place in a large baking dish and wrap with plastic wrap. Place in your refrigerator for 30 minutes to overnight.
The longer the chicken is allowed to sit with seasoning sprinkled on it,
the more flavor it will absorb before cooking…
Pre Heat Oven to 350 degrees f. Place a large ovenproof skillet on the stove. Heat to medium high then place chicken pieces into skillet.
Brown on both sides of chicken
(important to fully brown your chicken to creat the optimum flavor during braising in the oven)
Mix in Diced Tomatoes, ½ cup Vermouth, Diced Green Chilies, Red Pepper Flakes & Ground Black Pepper.
Place a lid on your skillet. Place skillet in the oven for 45 minutes.
Remove from oven and let stand for 5 minutes
Your Ready to Serve
Mama Carol’s Poultry Rub
¼ cup brown sugar - ½ Tbsp dry mustard
1/8 tsp cayenne pepper - 1/16 tsp sea salt
½ tsp – paprika, onion powder, garlic powder
¼ tsp – ground black pepper, sage, poultry seasoning
